Soaking:They are very hard and require soaking in water overnight (at least 12 to 24 hours) to soften.
Cooking:After soaking, they must be boiled thoroughly until tender.
Traditional Dishes: In Yemeni cuisine, they are often simmered with spices like turmeric and cumin, mixed with tomatoes, tamarind, or potatoes, and served with olive oil and zahawig (Yemeni hot sauce) alongside traditional flatbreads. Or used in Attar Stew that is eaten with a dish called (Khameer or Bakhumri).
