Yemeni cheese جبن يمني also called Taizzy cheese جبن تعزي and known in Yemen as "local cheese" (Jubn Baladi جبن بلدي) جبن مدخن.

The aroma of the smoked Taizzy cheese will take you back to the rural areas of Taiz. The cheese is semi hard and comes in small wheels with a thin, brown, smoked rind.

Produced from cow milk.
Shelf life is 7–10 days, for a longer life, it is advised to cut rinto small pieces and freeze.
